Instant Pot Swamp Potatoes are smoky, spicy, and comforting. This easy one-pot Southern recipe brings bold flavor to your table in just 30 minutes.
Ingredients
2 lbs red potatoes, chopped
1 lb smoked sausage, sliced
1 medium onion, diced
2 cloves garlic, minced
1 ½ cups chicken broth
1 tbsp Cajun seasoning
½ tsp smoked paprika
Salt and pepper to taste
Green onions for garnish
Instructions
1. Set Instant Pot to Sauté. Add sausage and cook 3–4 minutes.
2. Add onions and garlic, sauté 2 minutes more.
3. Turn off Sauté. Add chopped potatoes, broth, seasoning, and paprika.
4. Seal lid. Cook on High Pressure for 4 minutes. Quick release.
5. Open lid, stir gently. Add salt and pepper if needed. Garnish with green onions and serve warm.
Notes
Use waxy potatoes like red or Yukon gold for best texture.
To spice it up, add hot sauce before pressure cooking.
Leftovers can be mashed and repurposed for stuffed peppers or breakfast bowls.
